this week’s CSA

this week’s CSA box consists of turnips, spinach, baby kale, parsnips and radishes.  not bad.  i’m quite excited for the turnips.  i’ve been looking up recipes for the parsnips but i feel that i will be able to use them well… let the recipe search commence!  if you have any suggestions as to what to make with my newly acquired veggies, please submit!

    Em,
    Something that I do with kale:
    Creamy Peanut Butter & Kale (and Pasta)
    1 tablespoon vegetable oil
    1/3 onion, chopped (optional – I like them, husband does not)
    1 garlic clove, chopped
    1/4 cup natural peanut butter
    2 tablespoons soy sauce
    1/4 cup vegetable broth or water
    1/2 teaspoon coriander
    1/4 teaspoon chili powder
    1/4 teaspoon cumin
    1 bunch kale, chopped (or 1/2 bunch of kale & half pound of pasta (I use shells).
    Cook pasta if you are going to use pasta – steam the kale over top of the cooking pasta. If you aren’t going to cook the pasta, just steam the kale.
    Saute the onions in the vegetable oil.
    In a bowl, combine the peanut butter, soy sauce, vegetable broth (I find warming it helps to combine everything), and spices.
    Once kale and pasta are cooked combine all!
