OJ poached salmon

i took a brief inventory of what was in my fridge and came up with this.  quick and easy salmon poached in orange juice.  sounded good to me!

you’ll need:

  • orange juice, enough to cover the salmon
  • salmon fillets
  • salt and pepper to taste

pour the orange juice into a skillet and add the fish.  bring up just to a simmer and let it go for a few minutes.  cook the salmon until done, about 5-7 minutes, and remove, adding salt and pepper if desired.  serve with a side of veggies and top the salmon off with some of the juice.

that’s it!  quick and easy and a nice kick to a boring week night.
