Wild Leek Pesto Stuffed Chicken Breast

Ramps aka wild leeks were in my CSA.  I’ve never had a wild leek.  Now is the time to try it!  I searched for recipes online and this is what i found – wild leek pesto stuffed chicken breast.

The pesto recipe:

  • 1/2 cup walnuts, chopped
  • 1 cup wild leeks, chopped
  • 1 cup fresh spinach
  • 1 clove minced garlic
  • 1/4 cup extra virgin olive oil
  • 2 oz. romano cheese
  • salt and pepper to taste

Chop walnut, leeks, spinach, garlic and olive oil until chunky yet smooth.  Stir in the cheese and season with salt and pepper.  Serves 4.

Pound out four chicken breasts and spread the pesto evenly between each peace.  Place a generous dollop of feta on each and roll the chicken breasts, securing with a tooth pick.  You can either grill this for about 6 minutes on either side or in a 350 degree oven for about 10-15 minutes, or until the chicken is done.

it’s best when grilled because baking it did not give the chicken ANY color.  BUT it tasted OHHHH so amazing.  juicy chicken, the onion-y with a hint of garlic ramp pesto.  Yum!  Try the ramp pesto!!!
